Instant Mango Pickle

Pickles form an integral part of Indian meals. I remember my grandmother used to make pickles out of mangoes, hogplums, Amla, Lemon, Mixed vegetables. This Instant Pickle is one of my favourites. Its got a distinct taste & is quite different from the regular ones. You could try this for a change.

Preparation Time: 20 mins

Ingredients:
  1. Raw Mango - 1
  2. Chilli Powder - 2 tsp
  3. Asafoetida/Hing - 1/4 tsp
  4. Salt - As per taste
  5. Mustard - 1/4 tsp
  6. Turmeric - 1/4 tsp
  7. Fenugreek seeds - 1/4 tsp
  8. Oil - Groundnut

Method:

  • Slice mango into small cubes
  • Mix together salt, chilli powder & mango cubes
  • Heat oil & temper with mustard seeds, asafoetida, fenugreek seeds & turmeric
  • Add the seasoning to the mango mixture & mix well
  • Adjust salt & chilli powder as per taste
  • Store in air-tight jars. Can be stored for about 4 days

VP...this reminds me of Chennai days...use to make this in every summer myself with Kili manga..it taste so yumm...all time favorite..I wish can taste this :(...The pic is so tempting..looks just perfect

wow... this brings back a LOT of memories for me.. as kids when I used to visit my grandmother's house during vacations, which coincidentally was the mango season too, all my older cousins (girls) would make this, and we would revel in this dish in a palm hut (hut made of palm leaves for children to play in. This was built by older cousins (boys) in the backyard, very strategically under a mango tree!).. those summer days were real fun! lovely...mouth watering..:-)

yummy one,.thnks for sharin ,.readin ur post made me remember my grandma(dadi),,,she lovingly used to prpare pickles,..for veryone,..not at all affected by her old age...nd now my mother does the same she keeps askin me,,if anyone comin let me knw,..hve made pickle will send for u,...home made pickles are always the best cause of the extra ingredient love added to them,..
