Homemade Donuts

My Dad's an incredible cook & he whips up amazing stuff soo effortlessly. He made these super awesome Donuts yesterday. I managed to get a few clicks, before these warm Donuts were polished off

The best part about Donuts is that, it can be eaten as a breakfast or as a snack & even as a lunch dessert.


You Will Need:
  • 2 cups All purpose Flour
  • 1/2 cup Milk
  • 1/2 cup Sugar
  • 1 Egg - Beaten
  • 2 tsp Active Dry Yeast
  • 1 tsp salt
  • 1 tbsp Butter - Melted
  • Oil to deep fry
  • Powdered Sugar - To Coat
How To:
  • Mix yeast with sugar & warm water. Set aside for  about 20 mins or until frothy
  • In a bowl, mix prepared yeast, 2 tbsp flour & enough warm milk to make a smooth dough. Set aside for 1 hr.
  • In a another bowl, add remaining flour, warm milk, butter & mix well
  • Add this to the fermented dough & knead well. Wrap with polythene & set aside to rise for 30 mins.
  • Punch the dough to remove air & knead again.
  • On a flat surface, roll the dough into 1/4" thickness & cut into rings using a cookie cutter. Then, take a shot glass & cut out holes in the center of each donut.
  • In a deep vessel, heat cooking oil. Slide the donuts into the oil & cook 1 min on each side & they tend to brown very quickly.
  • Drain them on a kitchen towel & dust with powdered sugar

Enjoy Warm Donuts with a cup of Coffee or Milk .. Enjoi !!!!

Easy Garlic Bread

The other day, I & a friend of mine were generally discussing about food, & we had a sudden craving for Garlic Bread. Even after I hung up, I somehow just couldn't stop thinking about it. Especially, the one from Domino's. I love it & I can eat it everyday :)

I obviously didn't have the patience to make it from scratch, so I made this semi homemade easy version of Garlic Bread. All you need is some bread, herbs & ofcourse some garlic.

French Baguette works great for this one. Since, I didn't have one, I used regular white bread.

Easy Garlic Bread

You Will Need:
  • 4 slices white Bread/French Baguette
  • 2 tsp Butter
  • 2 tsp Olive Oil
  • 1 tsp Oregano
  • 1 tsp chopped Parsley
  • 2 tsp finely chopped Garlic
  • Salt as per taste
How To:
  • In a saucepan, allow butter to melt. Add olive oil & heat it a bit. Add chopped garlic, Oregano & chopped parsley & saute on low heat for about 3 mins.
  • Spread this mix on fresh sliced white bread on both the sides.
  • Toast it on a non stick pan or heat under the broiler until light brown
Serve with a HOT cuppa Coffee .. Makes a great Breakfast .. Enjoi !!!

NOTE: You can add some grated Parmesan on top while toasting the bread. I didn't want to add more calories, so I skipped this on. Moreover I am not a cheese lover. ( YES, I don't like Cheese :):)  !!! )

If you don't have fresh Garlic on hand, you could replace it with Garlic Powder.

Sankranti Ellu Bella - Sesame Jaggery & Peanut Mix

Tommorow is Sankranti .. I am super excited because, I get to wear new clothes & go house hopping to distribute Ellu Bella, Sugarcane, Sugar Candy ( Sakkare Achhu ) & fruits ...

Even though the Ellu Bella mixture is readily available in most stores, the homemade ones always hold a special place. It is fairly simple to make, but chopping jaggery & coconut does take quite a bit of your time.

Sankranti Ellu Bella

You Will Need:
  • 1 cup Jaggery - chopped into really small cubes
  • 1 cup dry coconut/copra/Kobbari - chopped into small cubes
  • 1 cup Hurigadale/Dalia
  • 1 cup peanuts
  • 1/2 cup white Sesame seeds

How To:
  • In a heavy bottomed pan, roast the peanuts. Once cool, remove the skin & halve them
  • In the same pan, roast sesame seeds on low flame until they slightly change color & set aside. Be careful when roasting sesame seeds as they tend to get burnt very quickly & turn bitter.
  • Grate the brown part of the dry coconut & chop uniformly into small cubes. Make sure the jaggery & dry coconut pieces are all more or less of the same size.
  • Mix all the ingredients together & store in air-tight jars.

Oats & Lentil Porridge

Lets begin the new year on a healthy note .. The other day, I replaced brown rice with oats & I loved the outcome. This creamy oats & lentil porridge is yum & makes a great meal.

Oats & Lentil Porridge

You Will Need:
  • 1 cup Quick Cook Oats
  • 2 tbsp Toor Dal - Cooked
  • 1 cup chopped Spinach - loosely packed
  • 1 small Tomato - finely chopped
  • 1 tsp chopped Ginger
  • 2 green chillies - chopped
  • 1 tsp Cumin seeds
  • 1/2 tsp turmeric powder
  • Salt as per taste
  • 1 tsp cooking oil
How To:
  • In a saucepan, Heat oil, splutter cumin seeds. Add green chillies & ginger & saute for 20 secs.
  • Add chopped tomatoes, turmeric & cook for a couple of mins. Add shredded carrots & spinach .Cook for another 2-3 mins till the tomatoes are soft & carrots are cooked. Spinach would have wilted by then.
  • Add 1 1/2 cups of water, add oats & cooked toor dal. Mix well & add salt. Bring it to a boil. Allow it to bowl for a minute or two. Turn off the stove,transfer to a serving bowl
Serve  HOT & enjoy a healthy meal ...
